Terry's passion for Kerala food is inherited from his mother Thankam, who knows how to cook numerous Kerala dishes from memory. Terry has grown up around tasty and healthy foods and knows how to create harmonious and taste buds-tingling nuances with Indian spices.
The purpose of spices is to stimulate appetite, digestion and joy in eating. Each spice has its own function and by combining spices you get a balance both in taste and effect.
The foods to be prepared have also been chosen so that their flavors and textures match and the foods digest as well as possible.
The course prepares spicy & tasty dishes
Lentil sauce, vegetable stir-fry,
coconut chutney, pappadam
White basmati rice and red rice are also cooked
(including organic ingredients!)
